Calamarata – Artisanal Pasta by Mancini from Marche

Calamarata or Calamari Rings are particularly excellent with a seafood sauce or your favorite vegetable sauce.

Mancini pasta is produced from durum wheat grown directly by the Mancini company; As a matter of fact they built their factory right in the middle of one of their fields. Semolina and water are the only ingredients. They use circular bronze die plates and dry the pasta at temperatures lower than 44°C, taking about 20 hours for short pasta and about 40 hours for long pasta to dry.
